Bon Appetit Olive Oil Tasting.

Last Summer David was asked to visit the Bon Appetit test kitchen in NYC to run the editors and test kitchen chefs through a mini Olive Oil 101 explaining the issues within the olive oil category. They wrote an excellent story as a result, giving their readers valuable insights into how to find the good ones and avoid the bad ones. One example from the training: All recipes in Bon Appetit prior to the training called for ‘Olive Oil’ in them. Since that training they now list ‘Extra Virgin Olive Oil’. This is the highest legal grade of Olive Oil.
